Hygiene safety has been particularly important wherever food is produced, processed and offered for sale or consumption, not only since Corona times. In 2016, the EU described good hygiene and manufacturing practices in the guidelines on PRP ("prerequisite programs") and HACCP ("Hazard Analysis and Critical Control Points").

Coffee preparation also places high demands on hygiene safety, especially when milk is added to coffee and water. That is why it is a core task for Melitta Professional Coffee Solutions to make hygienically safe coffee preparation as easy as possible for customers and partners.

Safety first: Cleaning automatically secured

Touch Display

Coffee beans contain essential oils – good for taste, challenging for hygiene. A fine film of grease settles in the pipes and continues to grow with each cup prepared. Even in the milk system of the fully automatic machine, every preparation leaves unpleasant traces. Therefore, the coffee system and the milk system must be cleaned daily according to the operating instructions if they have been used. Cleaned systems that have not been used for more than seven days should be cleaned again before operation. Please follow the cleaning instructions in the operating instructions of your coffee machines.

Don't worry:

Our fully automatic coffee machines show you when the programmed cleaning date has been reached. Then there is a limited time or product window until the automatic locking. Now it has to be cleaned so that the product output is available again.

Clean in Place (CIP®): automatic cleaning made easy

Railway station

We have coined the term "Clean in Place" (CIP®) for the automatic cleaning program of our fully automatic coffee machines. The cleaning of the coffee system and the milk system is carried out in a closed system, no components have to be dismantled or disassembled. Simply insert the cleaning agents into the cleaning chamber (coffee system) or the cleaning container (milk system), swap the cleaning container with the milk container (milk system) and start the cleaning program. Now the fully automatic coffee machine cleans itself completely independently.

Cleaning made easy: High-quality components

Touch Display

You can see it at first glance: We rely on high-quality materials and a no-frills, purist design for our coffee machines – and thus also on optimal conditions for hygiene safety. The housing of the Melitta® Cafina® XT series is made of refined aluminium, the spout is made of die-cast zinc. At the center is the touchscreen with a robust, 3 mm thick surface made of cut glass without pores in which residues could remain. Stainless steel shines in the separate hot water spout, in the steam wand and in the draining grid. Bean containers and instant containers are made of high-resistance polycarbonate. The smooth surfaces are satisfied with a damp cloth when cleaning. Bean and instant containers can be removed and cleaned in the dishwasher. Inside the coffee machines, high-quality components and materials such as the stainless steel brewing group not only ensure precise and almost wear-free processes, but also offer the best conditions for hygienically safe cleaning in a closed system.

Cleaning proven to be safe: HACCP certification

Our partners can be proven to be sure that our fully automatic coffee machines support their HACCP plan. The renowned sensory laboratory Prof. Dr. Ulrich Haevecker in Berlin has tested our fully automatic coffee machines of the Melitta® Cafina® XT and CT series for hygiene safety. The HACCP programme verifies aspects directly related to the chemical, microbiological and physical hazards covered by HACCP: material safety, cleanability of equipment and hygiene requirements. Our tested machines meet all requirements and are allowed to bear the HACCP mark.

Constant hot water and pre-rinse help twice as much

Water temperature in a fully automatic machine

Good coffee taste and hygienically safe preparation go hand in hand. A constantly hot water temperature during preparation ensures the desired temperature in the cup and at the same time protects against germ formation in the pipes. High-performance boilers with very precise temperature control and good insulation keep the temperature constant. Short, insulated pipes, a pre-flush of the pipe with hot water and the coffee dispensing close to the brewing group ensure that the coffee retains its temperature on its way into the cup.

Convenient and effective: Pre-dosed cleaners

Our coffee machine cleaners have been specially developed for Melitta® Cafina® fully automatic machines and thus ensure reliable, hygienically safe cleaning performance. All cleaners are pre-dosed (tablet form or sachet) so that the correct dosage is always given. The machine therefore always gets:

  • the right cleaner (one cleaner for everything)
  • the right amount (pre-portioned)
  • cleaning at the right time, as the system shows the necessary process on the display, and is thus optimally maintained and cleaned clean without leaving any residue.

 

One for all: Multi-Tab

The Multi-Tabs are the right product for descaling or cleaning milk and brewing systems, thus guaranteeing the longevity of the fully automatic machines. Phosphate-free and environmentally friendly. The Multi-Tab can be used to clean both the milk system, the coffee system (and the instant system). This means that only one cleaner is needed to safely clean all components of the fully automatic machine. For the milk system, an acidic AMC milk cleanse is also necessary once a week, as milk contains lime.

Milk frothing variety and milk hygiene made easy

Milk froth

Our fully automatic coffee machines are also first-class milk machines. Cold milk, warm milk, cold milk foam, warm milk foam, hot milk foam. Liquid or creamy milk foam frothed with steam or, as the crowning bonus, the stable Melitta® TopFoam: Our Standard, Professional and TopFoam milk systems produce a wide variety of milk foam and sophisticated combinations of different milk and coffee preparations "by touch". Cappuccino, Cappuccino Italiano, Cappuccino TopFoam, Latte Macchiato, Latte Macchiato TopFoam, Latte Flat, Flat White, Espresso Shot, Whitepresso and, and, and. Really delicious in taste, easy and safe to prepare.

The hygienically safe processing of fresh milk is made possible by suitable milk coolers for cooling pre-cooled milk, which are available as building blocks for one or two types of milk, as a storage refrigerator or as a combination with cup warmers. The automatic cleaning program takes care of the daily cleaning of the milk system.

Practical helpers on top

The set drawers of our fully automatic coffee machines are also made of high-quality plastic with a smooth surface and are easy to clean with a damp cloth or in the dishwasher (see operating instructions).

If you can place a waste container under your machine and have it equipped with the optional container drop, you save the intermediate storage of the set drawer and its cleaning. Another example of optional equipment that can simplify hygiene measures depending on the situation on site is 4-inch stands.

And: An optional transparent handle protector below the spout. It can only be opened when the preparation of the desired drink has been completely completed, thus avoiding premature grabbing and protecting against spills or splashes at the coffee dispenser due to misbehavior.

Self-service via smartphone: Melitta® Remote Coffee

Remote

If you want to operate the fully automatic coffee machine without touching it, you can also use your smartphone or tablet. If the machine is equipped accordingly, the display of the coffee machine shows an individual QR code for contactless beverage purchases. Anyone who scans the QR code can choose from the current range of beverages on their smartphone or tablet and start preparing it there – without downloading or installing an app. Touching the screen of the coffee machine is then no longer necessary. The prerequisite for this is that your fully automatic coffee machine is equipped with a telemetry module and the Melitta® Remote Coffee software update. Talk to us!
